Ingredients:
For French Toast:
1 loaf fresh baked white or whole wheat not sliced
4 whole eggs
1 cup 2% milk
1/4 tsp nutmeg
1/4 tsp cinnamon
2 oz spiced dark rum
4 tbsp butter
For Sauce:
1 oz maple syrup
4 oz 35% cream
2 oz butter
2 ripe bananas (slice on angle into six)
2 tbsp brown sugar
Optional toppings:
1 oz sliced toasted almonds
fresh berries
1 tbsp icing sugar for dusting
Method:
For French Toast:
Preheat oven to 200 degrees Farenheit. Slice bread into 6 1 inch slices, set aside. In medium sized bowl whisk together eggs, milk, nutmeg, cinnamon, and rum for about one minute. Turn element on to medium high heat. Place 12 inch non stick pan on element, add 2 tbsp butter to pan. Coat bread in egg mixture until well soaked, add to pan 2 pieces at a time. Cook approximately 2 minutes each side or until golden brown. Place in oven to keep warm.
For Sauce:
Place 6 inch pan on medium high heat. Melt butter then add bananas, brown sugar. Stir with wooden spoon, increase heat to high. Add cream and cook for 2 minutes.
Divide french toast onto three plates. Pour sauce over french toast. Dust with icing sugar, garnish with berries and toasted almonds(optional).
