Sweet Potato Pecan Pie
Ingredients:
3 eggs
3/4 cup light corn syrup
3/4 cup white sugar
4 tbsp melted butter
1 tsp vanilla
1/8 tsp salt pinch
1/8tsp nutmeg pinch
1/8 tsp cinnamon pinch
1 cup pecan halves
1 unbaked 9 inch pastry shell
1 medium sized sweet potato
Preheat oven to 400 f bake sweet potato in foil paper until soft and scoop out filling and set aside.
In medium bowl beat eggs lightly, add corn syrup, butter and remaining ingredients stir until mixed together, then fold in sweet potato and pour into pie shell.
Place on baking sheet cook at 400f for 15 min then reduce heat to 350f and cook for 30-35 min until pie is browned and puffed across the top.. cool and serve with fresh whipped cream..
